Sandwich is always healthy with the right ingredients. That being said, we look for healthy yet tasty options. Egg is an all time favorite when it comes to sandwiches and it is really filling. This particular egg veggie sandwich is best paired with tomato ketchup. You can either toast the bread or use it raw. It is a protein rich sandwich which can be very well added if you’re looking for a diet.

Everyone will love this egg veggie sandwich from kids to adults and it’s easy to prepare. To make the egg veggie sandwich, you need to prepare the egg veggies. The stuffing is prepared with ingredients like eggs, onion, tomato, capsicum, green chilli, coriander leaves and some spices. To enhance the masala flavour, add little pavbhaji powder. You can also compensate white bread with wheat bread or multi grain bread for an even healthier option. You can consume it for breakfast, evening snack with coffee or tea or have it for dinner.

  • 1 tomato
  • 1 green chilli
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon coriander powder
  • salt as required
  • 1 tablespoon butter
  • 2 bread slices
  • 1 onion
  • 1 capsicum (green pepper)
  • 2 tablespoon coriander leaves
  • 1/4 teaspoon asafoetida
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon garam masala powder
  • 1 tablespoon virgin olive oil
  • 1 tablespoon green chutney


Take a bowl and crack eggs in it with salt and pepper and whisk well. Heat oil in a pan. Add asafoetida, cumin seeds and let them splutter for a few seconds. Now add chopped onion and green chilli. Saute for a minute. Now add chopped tomato and capsicum. Mix and saute for 5 minutes. Add turmeric, red chilli powder, coriander powder, garam masala and salt. Mix well.

Now add whisked eggs to the pan and quickly mix and scramble the eggs. Adjust the salt as per taste and cook the scrambled eggs until done. Finally, garnish with chopped coriander leaves and your Anda Bhurji is now ready to be stuffed in sandwiches. Take a bread slice and spread butter on it. Spread mint chutney on another slice. Now stuff some of the Anda Bhurji in the slices to make a sandwich. If you wish, you can also grill the slices.
